Our new favourite pancakes, it’s a Jamie Oliver recipe someone has adapted on the recipe community. We use the whole apple, skin and seeds.  Reprinting recipe below so it’s easier to follow : Apple and Blueberry pancakes 

  • 1 whole apple, quartered (leave skin on)
  • 200 g SR Flour White or Wholemeal, or buckwheat flour
  • 1/2 teaspoon cinnamon ground
  • pinch of nutmeg
  • 250 g milk
  • 1 egg
  • 1 heaped tablespoon honey
  • 100 g blueberries, fresh or frozen
  1. Place apple into TM Bowl for 2 secs on speed 6, scrape down sides of bowl.
  2. Add remaining ingredients (except blueberries) & mix for 5 secs on speed 5.
  3. Add blueberries & mix for 1 sec on reverse speed 3.
  4. Cook in a medium heat in fry pan with a little butter, until golden and springy to the touch. Serve with your favourite fruit and syrup & some homemade yoghurt.

TIPS Based on 2 Jamie Oliver Recipes.Mill your cinnamon & nutmeg fresh for an even more delicious result. Gluten free option mill almonds & buckwheat to use in place of flour.

Made this Jumbo fruit loaf today to give to my father who loves raisin bread, this time with raisins instead of sultanas and it’s perfect. Made rolls instead of a second loaf and they’re amazing, so soft. Couldn’t find instant dried yeast in the supermarket so had to use active dried yeast. The only difference is you have to allow the yeast to activate in the liquid and sugar first( 2 mins, 40c, speed 3)it should foam on top when it’s activated, then add all the other ingredients and carry on with the recipe.

Tried another popular brownie from the recipe community. Our favourite thermonix recipe  so far has been the masterchef extreme chocolate brownie. This recipe makes a slightly smaller brownie but is still good. I reduced sugar from 350 g to 140 g as per some suggestions in the comments. Lovely brownie, not as rich as the masterchef brownie but a nice lunchbox/afternoon tea  treat for the kids. Try cook for 20- 30 minutes next time, to retain more moistness.

Oh my goodness, this beef curry from the recipe community  is sooooooo good. Everyone loved it and it’s definately worth the 5 stars and 200 favourable comments. Miss 8 usually can’t eat curry but couldn’t get enough and even ate it on it’s own without rice. Left out the chillies and used fresh tomatoes because we didn’t have tin tomatoes (blitzed a few seconds at speed 5 after adding them) and just added a tablespoon of tomato paste instead.  Substituted coconut milk for the small amount of cream. Served with stir fry vegetables was a huge hit  tonight and will be definately be a family favourite. Would be awesome with lamb too.

PS The turmeric unfortunately does stain the lid but I’ve been told placing in sunlight will break down the colour. PSS And it does work! A couple days later the colour  has faded away. Still slightly discoloured but not noticeably.

Great recipe ! Made these mini quiches using puff pastry today. They are perfect snack, lunch box or party food.  Another popular trending recipe from the community( link above ). The filling was made in a minute and makes either 24 mini savouries or  12-15 muffin size savouries. Next time chop bacon in thermomix first, before blitzing the cheese, onion and parsley. Then no need to cut anything.  Added some spinach and an extra egg. Kids can’t taste the onion, almost a whole onion in these savouries, because it’s blitzed  to a paste. Used two puff pastry sheets. The mini muffin tin size was too small, eaten in minutes, so made another two batches using normal muffin tin. Frozen in bags ready for lunches. Yippee … The only problem is cleaning the muffins trays..

It’s been responsible for a food revolution in our house. There are so many new favourites adding a huge amount of variety to what we eat.

With thunder and lightning outside, it seems like a good night for pasta. Normally use Quirky cooking bolognese for lasagne because it has more herbs and  vegetables blended into the sauce .. no need for a extra vegetable dish..but today decided to try the guided recipe. It’s so much easier following guided, only used a tray of mince which is approx 500g instead of 800g so I increased the tomato content. Used fresh tomatoes instead of tinned. And the bechemal sauce is a one step process using 1000g milk and makes double the separate  guided recipe for bechemal sauce. The lasagne is great. Everyone is happy and it makes a huge baking dish.

The guided foccacia is one of the easiest breads to make usually only a prove of 40 minutes is enough in a warmed thermomserver. We don’t bother with the second prove, just roughly flatten onto the baking tray, dimple the top, sprinkle with thyme or rosemary and sea salt. It proves in the time it takes to heat the oven. It is so good and any leftover is sliced and bagged into freezer for lunches.  Even after making this dozens of times it still surprises us with how consistently good it is, the texture and the taste is better than anything we’ve ever bought even from our favourite bread shop in Auckland Wild Wheat which is just across the road.

Power start the day with green smoothie… Miss 8 says what’s in it? She wrinkles up her nose at the ingredients but then I say it’s  “dragon juice”.  She immediately downs it and says ohhhh  yummy. In the green smoothie today orange, lemon, mandarin, a few ice cubes and a cup of water, mint, cucumber, parsley, linseeds,  lettuce and ginger blitzed for about 30 sec on speed 9. Most recipes say a minute but  to cut the noise down in the morning so 30sec still works fine. Mix and match from guided recipe to the many combinations on the web and recipe community. Notes: rinse lid after juicing, the green juice can discolour the lid if you leave an hour before cleaning, probably the acid from the lemon juice.

Chilli Mussels with Thyme and Tomato

Guided recipe for mussels steamed in Varoma while the sauce cooks in the TM bowl is fantastic.  Added some coriander to the tomato base instead of chilli so the kids could eat. The picture doesn’t show but there’s alot of tasty sauce to eat with the mussels. First peek at 15 minutes some of the mussels still closed ( possibly because I was cooking 1.5 kg instead of 1kg ),  put the cooked ones in serving dish and steamed the remaining for another 6 minutes. Great so simple and  could get onto another dish while the thermonix cooked the dish by itself. The only problem was it was almost all gone at afternoon tea. Miss 14 said better than the ones at the pub … Wow never heard that compliment before.
