Sometimes you just don’t feel like going to the supermarket and Sunday afternoon was one of those days. Looked in the fridge and saw two boxes of tomatoes and thought maybe just soup and bread for dinner. Made pizza dough in the thermomix first. While the dough was proving, used the  guided recipe for creamy tomato soup. Substituted milk for cream and only used 50g instead of 100g. Pizza dough rolled out sprinkled with olive oil, sea salt and oregano and baked for 10 minutes.  The soup and bread meal was loved by the whole family.  Perfect simple vegetarian meal. Then whipped up automatic custard for dessert while we watched a movie. And there was enough leftover for husbands lunchbox.  Happy days !

Mushroom soup

Today I discovered a packet of mushrooms in fridge that needed to be used sooner rather than later so… Out comes the thermomix to rescue the old mushrooms.

Using  the guided recipe called for 200g of mushrooms.  I had about 400g leftover in fridge and used it all. The result is a slightly darker looking soup. The soup only took about 10 minutes and all we had to do was pop in mushrooms, water, milk, homemade (tmx) vegetable stock and cream. Delicious and so simple. Miss 8 loves mushroom soup and the recipe made about 1.5ltrs enough to freeze for later . Probably 6 large bowls. Fabulous!

In preparation for Christmas we cleaned out our fridge and decided to use up all the leftover vegetables for dinner. Quarter of a head of cauliflower was blitzed into a mac and cheese bake, white sauce made in thermomix. And six tomatoes, the wobbly ends of two celery  stalks along with the fabulous thermomix vegetable stock and egg ribbons became a light tomatoey soup. Used a quick 10 minute recipe from the TMX lunchbox snack recipe book. Good fast food to sit in front of TV  after a long day of spring cleaning. Kids loved the combination of pasta cauliflower and cheese. And the soup and salad was perfect for the mum and dad.

Busy weekend ahead with kids concerts, so making meals in advance. This is so easy with the thermomix. Used vegetable soup guided recipe to make leek and potato soup. Great to be using the homemade vegetable stock. Soup is velvety smooth.

Next time will try sautéing the onions and garlic first in TM before adding all the other ingredients to cook but otherwise easy and the one pot, leave it to cook is fantastic when you’re busy.
