Sometimes you just don’t feel like going to the supermarket and Sunday afternoon was one of those days. Looked in the fridge and saw two boxes of tomatoes and thought maybe just soup and bread for dinner. Made pizza dough in the thermomix first. While the dough was proving, used the  guided recipe for creamy tomato soup. Substituted milk for cream and only used 50g instead of 100g. Pizza dough rolled out sprinkled with olive oil, sea salt and oregano and baked for 10 minutes.  The soup and bread meal was loved by the whole family.  Perfect simple vegetarian meal. Then whipped up automatic custard for dessert while we watched a movie. And there was enough leftover for husbands lunchbox.  Happy days !

Ingredients 3 chicken thighs, onion, garlic, fresh herbs, white root vegetables, and salt make up this chicken stock made in the thermomix. Just added the ingredients and the thermomix does all the cooking and blending. The recipe makes about 2  jars and will last months. One jar is put straight into our freezer.

Miss 14 was looking through our new thermomix cookbook ‘Festive Flavour’ for a new recipe to try and the pretzel recipe  jumped out. We love the pretzels from the hole in the wall pretzel shop in upper Queen St. Their apple and cinnamon pretzels are super yummy so we’re hoping this recipe measures up. The recipe is simple and dough is prepared in a few minutes and left to prove in warmed thermoserver. Miss 14 shaped into pretzels, dipped into hot water mixed with baking soda before baking for 10 minutes. Half sprinkled with cinnamon sugar. Fab homemade pretzels.

What to do with leftover chicken… I’ve always been partial to the ‘Asian slaw’ they sell at Nosh. So this is a thermomix version done in seconds.  Minced a tiny bit of ginger a few seconds speed 6. Then added …

1/4 cabbage, 1 carrot diced, some leftover cooked chicken, a few peanuts and a handful of pinenuts, squeeze of lemon,  white wine vinegar, little bit of sugar,  sesame oil, and a few sprigs of coriander.

Two one second pulses on turbo and it’s done. You could add any herbs or vegetables to change the flavour but for a quick meal it’s awesome.  Delicious, now I’ll be making it for dinner too!

Ps easy on ginger, I’ve tried a couple of recipes from the community where they ask for cm cube of ginger and it turns out overpowering the whole salad. Second time around for dinner I turboed one too many times and turned another salad into dip. Was still lovely smeared on pizza bread though but will have to really watch speed on these salads. Have turned quite a few salads into purée a second or two too long or pulsing on too high a speed.

Three slices of pineapple, 2cups of ice and a tsp of sugar. The pineapple was a bit sour so blitzed a bit of sugar first then mixed in pineapple  and ice blitzed about 30 sec to 1 minute at sp 10. Making our own sorbets is very easy and great for cooling down the kids after school.

Recipe from Cooking for me and you. At the end of the day, kids wanted Spaghetti Bolognaise the old fashioned way on the stovetop and we wanted a salad. While quinoa steamed in the thermomix, there was time to cut up the salad ingredients and make the dressing. Rocket (substituted for capsicums) cherry tomatoes, chickpeas, chopped mango, cooked quinoa. Dressing is lemon juice, mint, coriander, chilli, olive oil, and cumin. In the pre thermomix days our salads were always pretty boring now they’re bursting with new flavours and ingredients. And I’m enjoying seeing the kids try new foods. They’ve never eaten quinoa before and both ate this salad with their pasta.

Doesn’t look like much but what is perfect about stew  is , it’s a one pot meal. When you’re busy and everyone’s hungry, you really appreciate being able to chuck everything in one pot and out pops a full meal. Wondering around the supermarket today, thought  it was time for a seafood dinner, checked on the thermomix app for a suitable recipe and found this yummy seafood stew. 20 minutes prep time sealed the deal for me. Just grabbed the ingredients; mixed seafood from the supermarket. Chopped up garlic, herbs and onion in thermomix, added tomatoes, capsicums, fish stock,  coconut milk blitzed into a sauce and that was cooked earlier today in the thermomix. All that was needed to complete the dish was to add the seafood and cook into the sauce.  Very simple and another tasty meal. Kids were served this over pasta and parents had it over rice. Chopped chives and coriander complete the dish and it was cooked in six minutes.  Next time I’ll add more vegetables into the sauce. The kids won’t normally touch capsicums but blitzed into the sauce they’re none the wiser. Everyone happy,  another winner recipe and a new dish to add to the family menu. Yah!

Oops ate a piece before the photo could be taken! Just received a new recipe book and chip “Cooking for me and you”. This book and recipe chip caters for gluten free and vegetarian diets and specifically created for  two person meals, we figured adapting for a family wouldn’t be too difficult. The guided recipe above was made for kids afternoon tea today, called ‘breakfast bars’. This slice is a highly nutritious combination of nuts, seeds, and dried fruit. Used prunes instead of apricots, other ingredients ..figs, assorted nuts, 3 eggs, pepitas, sesame seeds, sunflower seeds, coconut and maple syrup . Not very sweet because I reduced maple syrup from 60g to 35g. Probably add some chocolate chips for the kids next time as there were no ahhhs today !  But it’s certainly healthy and simple to put together and it will be great for their lunchboxes.

Another great guided recipe. Only required red curry paste, chicken, coconut milk, sugar, fish sauce and vegetables.  Hope it lasts for dinner because it is very tasty.  We love Thai food and this is particularly easy. Have to admit, haven’t got round to making my own TM red curry paste, just used a tablespoon of the Greggs red curry paste from the jar. The heat was just right and could be increased with fresh chilli. Substituted  bell peppers, cabbage, basil and spinach for the peas, thai basil, and broccoli in the recipe because that’s what was in the fridge.  Didn’t have kaffir lime leaves or bamboo shoots either so left these out too. Just stirred the spinach through the cooked curry. Topped with fresh coriander ….  excellent recipe and will be definately saved to favourites! It still tasted great with all the substitutions  and exclusions. We like flexible recipes like this.
