Been on a 3 month project that has meant a lot of time out but now ready to try some more Thermomix recipes.  Cycling through all our favourites has been great, but now can’t wait to try some recipes from the new Festive Flavour book and we have some recipes from (Masterchef winner) Brett McGregor’s last Thermomix course too that are excellent.

Tried the guided fish parcels with mixed vegetables from Basic cookbook for dinner tonight. Its a great timesaver meal because the potatoes steam in the basket at the same time as the fish parcels in the varoma. Fish parcels marinated in lemon, olive oil, salt and pepper. Vegetables chopped in tm bowl then placed onto fish before steaming.  Drizzled with reserved  lemon and parsley sauce and it’s simply delicious. Kids didn’t even notice the cooked carrots and celery which can often be a turn off for them.

You would never believe these tmx vegetarian sausage rolls didn’t contain meat. Another fantastic guided recipe that makes a whole tray and great frozen for  lunchboxes .   The filling is made from walnuts rolled oats and feta cheese, a bit runny but cooks up fine if they’re cut by pressing rather than sawing. Then the filling is a little more enclosed in the roll and doesn’t ooze out. Super tasty and made with guided puff pastry recipe which was very easy too. Best of all the puff pastry is much less greasy than the bought pastry. Watched a YouTube video on how to roll out which  will be copied below

The guided tmx vegetable soup is great. Just using up the old vegetables in the fridge with the tmx vegetable stock. Served with salad also using up vegetables in fridge, with cooked leftover chicken. Dressing was a combination of Pete Evans Asian slaw dressing and Chelsea winters vietnamese salad dressing ( fish sauce, soy sauce, grated ginger, dried chillies, lemon and lime juice honey and brown sugar and sesame oil) Easy no fuss Sunday dinner.

Scrumptious crunchy gingernut biscuits, highly recommended on Thermomix nz facebook page. Just doubled the ginger to 2Tb as suggested by some users.  To save time we just mixed all ingredients together in Thermomix at the same time and laid onto the tray in one thin layer because it was very crumbly.  Then cut up after cooked. Rough cut gingernut biscuits great with a cup of tea.

Cauliflower and Broccoli gratin

Used the guided cauliflower gratin recipe, it steam veges in Varoma 25 mins. Then  white sauce made in 7 mins no stirring. Added grated cheese and grilled for a few minutes to brown the top. Easy side dish that cooks itself.

Rice Salad

Wonderful guided brown rice salad from the basic cookbook. Vegetables steam at same time as the rice which cooks in the basket. For extra flavour to the rice, added a tablespoon  of chicken stock paste to the steaming water.  Mixed in tuna, cherry tomatoes, olives, mint, parsley  and gherkins at the end. Perfect for lunch boxes and when you need to cook ahead. Yah easy dinner is done before midday.

Will try a friend’s suggestion next time, mix cooked rice with the chopped raw salad recipe from the basic cookbook as a change from cooked vegetables and add different combination of proteins and herbs and would take out time needed to chop vegetables too ( chickpeas/ bacon/ coriander/ roasted vegetables/ feta/nuts/cranberries)

Tip : let the rice and vegetables cool before assembling

Guided shepherds pie recipe from basic cookbook chip. Mash potato topping super smooth ( guided recipe) and tasty even without parmesan. Tip: make sure potatoes diced 1cm to ensure they are soft before bring whipped into mash. Served with raw broccoli salad. Scrummy, the kids love both these dishes.
