Recipe from Cooking for me and you. At the end of the day, kids wanted Spaghetti Bolognaise the old fashioned way on the stovetop and we wanted a salad. While quinoa steamed in the thermomix, there was time to cut up the salad ingredients and make the dressing. Rocket (substituted for capsicums) cherry tomatoes, chickpeas, chopped mango, cooked quinoa. Dressing is lemon juice, mint, coriander, chilli, olive oil, and cumin. In the pre thermomix days our salads were always pretty boring now they’re bursting with new flavours and ingredients. And I’m enjoying seeing the kids try new foods. They’ve never eaten quinoa before and both ate this salad with their pasta.
Ok…so the broccoli salad from the thermomix guided recipe is great but this one from the recipe community (link above) tops that one. Nb Just ease up on salt, add 1/2 tsp salt instead of full tsp or salt to taste at end. Raw broccoli, cauliflower ( substituted for red capsicum which we didn’t have ), apple and pinenuts put into thermomix with the dressing. The dressing is apple cider vinegar ( substitute, didn’t have any white balsamic vinegar ) dijon mustard, honey and olive oil. It’s so good that you can’t stop eating it, worth it’s 89 plus comments on the recipe community. The whole family came out with a collective “mmmmmmmm” when we tried it. 5 seconds to create in the thermomix, still can’t get over how quick and easy. Fabulous salad! We will be using this recipe alot and I’ll be sure to try it with red capsicum as well.
Two Beetroot, two carrots, two sprigs of coriander and 3TB apple cider vinegar chopped in thermomix 4 seconds speed 5. Spooned over bed of spinach leaves and topped with pomegranate seeds, salt and pepper and a squeeze of lemon. Lovely summer salad.
Cauliflower fried riceButter chicken. cauliflower rice and salad almost all eaten
From Pete Evans paleo family food cookbook, had to try the cauliflower fried rice, used the thermomix to blitz half a cauliflower head 5 seconds speed 5 in reverse. Perfect minced cauliflower, ready to pan fry in coconut oil for a few minutes. Butter chicken made again in thermomix. I used 1.2kg of chicken thighs instead of 750g because there is always plenty of sauce and then just increased cooking time by 10 minutes. Served with a simple salad and rice just in case kids decided to be fussy. Love the cauliflower rice!
There are some recipes on the community website for cauliflower rice done entirely in the thermomix too. But I’m happy with a few minutes stir frying while the butter chicken cooks itself.
A year ago after seeing the earlier model thermomix Tm31 at a demo and feeling I couldn’t justify the expense, I bought a pressure cooker as a consolation purchase. At a fraction of the cost, it has served us well making risotto, soups and stews super fast. The Breville fast slow cooker also had a sauté function so it was one pot cooking and also had the prep and walk away factor. Accuracy with measurements were not an issue, I could within reason add more ingredients or meat or rice and the end result more forgiving because the high pressure ensured it’s all fully cooked. So the thermomix had a lot to live up to in comparison with regard to risottos, stews, and soups.
The risotto I made in the thermomix using the guided touchscreen recipe, was slightly undercooked but once left in the thermoserver for a few minutes it completed cooking. On reflection this was most likely because I added more mushrooms and slightly more rice accidentally than the recipe required. The onions could have been sautéed longer than the recipe stated. The kids noticed the onions in the risotto made in TM. I definately saute longer in pressure cooker until onions are browned and softened. All things considered, the Tm5 did a good job with risotto but with a little more expermentation ie sauté longer and cooking slightly longer this will perfect the recipe. I stirred through cooked corgettes after to add another serve of vegetables. Lovely meal and will definately try again.
Today I discovered a packet of mushrooms in fridge that needed to be used sooner rather than later so… Out comes the thermomix to rescue the old mushrooms.
Mushroom soup
Using the guided recipe called for 200g of mushrooms. I had about 400g leftover in fridge and used it all. The result is a slightly darker looking soup. The soup only took about 10 minutes and all we had to do was pop in mushrooms, water, milk, homemade (tmx) vegetable stock and cream. Delicious and so simple. Miss 8 loves mushroom soup and the recipe made about 1.5ltrs enough to freeze for later . Probably 6 large bowls. Fabulous!
2 seconds on speed 5 produces this wonderful salad, raw beetroot and brocoli , carrot, apple and red onion topped with roasted pinenuts. Dressed with lemon and olive oil makes it super zesty and so simple.
Again, love how easy and quick it is to blitz up cabbage, carrot, apple to make coleslaw. Homemade thermomix mayonnaise and a sprinkling of raisins completes the salad.
Busy weekend ahead with kids concerts, so making meals in advance. This is so easy with the thermomix. Used vegetable soup guided recipe to make leek and potato soup. Great to be using the homemade vegetable stock. Soup is velvety smooth.
Next time will try sautéing the onions and garlic first in TM before adding all the other ingredients to cook but otherwise easy and the one pot, leave it to cook is fantastic when you’re busy.
