Used Pete Evans Kale Caesar salad recipe as a base for this Caesar salad. It’s a paleo recipe so there’s no croutons.  The eggs were precooked in the Varoma tray with the chicken velouté meal. Love how the thermomix saves time  and pots like this . His recipe uses kale but I substituted spinach because the kids prefer spinach leaves to uncooked kale.  Used the thermomix to blend the dressing made from anchovies, Dijon mustard, lemon juice, egg yolk and emulsified with olive oil. Super yummy dressing, added a little water to make it easier to pour over the salad and makes enough for another salad tomorrow. What is very satisfying is seeing how many greens and vegetables everyone eats with this dressing. And the salad ingredients are whatever was in the fridge and pantry- spinach, tomatoes, peppers, bacon, toasted pine nuts, cranberries.

These steamed buns are a great way to use up leftover meat. We had some chicken meat, minced  up in thermomix 3 seconds , speed 4. Then stir fried with some grated carrot,  hoisin sauce, soy sauce, sugar and thickened to a gravy with cornflour and water.  Made the dough in the thermomix in 10 minutes and because the dough doesn’t require proving, we can roll  them straight away.  Everyone enjoys being involved in the process of  making and filling the buns and we compete to see who can make the best looking bun that doesn’t split apart after steaming.  The best are of course mums!

Dough recipe

  • 400 g flour
  • 100 g water
  • 2 tsp dried yeast
  • 100 g milk
  • 70 g sugar
  • 1 Tb oil
  • 2.5 tsp baking powder
  • pinch salt

Directions

  1. Add all dough  ingredients to thermomix.
  2. Mix 6 seconds , speed 6.
  3. Knead 1 minute on dough mode.
  4. Divide into about 30 to 40 pieces. Roll into flat rounds, fill and wrap to close. Place buns into Varoma tray and dish.
  5. Fill thermomix bowl with 1.5 l boiling water.
  6. Place Varoma tray on tmx, steam buns 10 mins, Varoma temp, speed 3.

This one from  the recipe community was well liked ( link above) and made with yoghurt and separated eggs. The one we had tested previously was an easy waffle recipe in which all the ingredients for the batter were mixed all together.  (egg whites were not separated) We’ve decided we prefer the crispness of a waffle batter that has whipped eggs whites. Although this sugar free waffle recipe is  a good recipe, the kids cleverly thwarted my attempts to reduce sugar by slathering  the waffles with huge amounts  of maple syrup which really defeats the purpose of a “sugar free waffle”. So after trying two popular recipes from the community, we’ve decided our own family recipe is still our favourite. Separating the egg whites makes the waffles lighter and crispier. Here it is converted for the thermomix :-

Our family favourite waffles

  • 2 eggs
  • 1.5 c milk (355 g)
  • 0.5 c vegetable oil (90 g)
  • 1.75 c flour (245 g)
  • 1 Tb baking powder
  • 1 Tb sugar
  • 1 tsp salt
  1. Preheat waffle maker.
  2. Butterfly in, Beat eggs white in thermomix bowl 1 minute, speed 4. Set whites aside.
  3. With butterfly still in, Add egg yolks, mix 30 seconds, speed 4.
  4. Add milk, oil, dry ingredients, mix 5 sec, speed 4.
  5. Add egg whites back in  mix 5 sec, reverse sp 2. (Or just fold in whites )
  6. Cook in waffle maker.

This recipe makes about 6, 4 section waffles. Enough for two breakfasts and great frozen and toasted later for quick easy breakfast.

The great thing about boiling pasta in the thermomix is not having to watch the pot making sure it doesn’t boil over. I added preboiled water, added the pasta,  then set the timer,  walk away. Very convenient.

The dough base is very wet. Was slightly worried it wouldn’t turn out but after 10 minutes at 210C it the base was cooked enough to lay the toppings. The gluten free base  tastes lovely, very light. Made by milling basmati and brown rice, millet, seeds, buckwheat in the thermomix adding arrowroot flour and water and leaving to rest for 20 minutes.  Recipe from Quirky cookbook by Jo Whitton. What’s for dessert? Automatic chocolate custard, load all the ingredients into the thermomix bowl; milk, sugar eggs, and cocoa,  turn the dial, nine minutes later perfect hot chocolately comfort food, went down well with family Sunday movie night. Only trouble was should have made the 6-8 servings portion because we all wanted seconds and there wasn’t enough to go around. Would be even better chilled but nobody wanted to wait that long!

You’d never believe this was a steamed chicken. Another winner  recipe from the recipe community: link is above, the chicken is stuffed with lemon, garlic, onion and celery, then brushed with a honey cinnamon paprika glaze and steamed in the Varoma for 60 minutes. Finished off with a 15 min quick roast in oven to crisp up the skin (10 minutes probably enough too). Gravy made from the reserved liquid in the thermomix bowl. The chicken breast is succulent and moist right through and the legs were eaten as soon as it came out of the oven before I could snap a photo. Many favourable comments on the recipe and the family agreed with all of them. Will not be oven roasting chicken again as the steaming keeps the  meat so moist tender.

Although it’s  still three steps to make macaroni cheese with the thermomix; boil pasta, make cheese sauce, bake or grill in oven,  you can boil the pasta while the thermomix cooks the sauce. The thermomix grates the cheeses, and after the flour, butter and milk is added, cheese sauce is done in 9 minutes, no stirring, and perfect lump free cheese sauce.   Tossed with cooked pasta, some chopped ham and tomatoes. Was eaten before I could pop into the oven for a few minutes to grill the top.  Enough for lunch and dinner with roast chicken. Link below

The kids love this mac and and cheese sauce straight out of the thermomix, no grilling necessary. There’s nothing better on a cold wet windy day to be inside with comfort food. Macaroni  cheese becomes a tasty pasta salad  for mum and dad too, added bell peppers, fresh tomatoes and fresh basil straight from the garden to balance the high carb hit!

Struck gold again ! This is the first batch of KFC chicken made by blending spices in the thermomix. This recipe is from “the road to loving my thermomix’s” blog and was posted onto the recipe community,  link above.  After a few nights of easy soups, stews and one pot meals, tonight we definately felt like some fried food.  The spice mix was milled in the thermomix with some flour and breadcrumbs I had leftover. The recipe makes plenty of spice rub, probably enough for two meals. Used thinly sliced chicken breast, egg wash and dipped into spice mix twice before lightly  pan frying.  The kids verdict is it’s better than KFC.  That’s not a light recommendation. And all natural with 10 different herbs and spices, no additives or flavourings, it’s a great blend to add to the kitchen cupboard.
