Our favourite chocolate cupcake recipe converted for the thermomix, so quick to make up 3 trays of chocolate cupcakes made for concert baking.  One batch of 36 all done in one bowl! And the best part is the quick self clean bowl  and   very few dishes as all ingredients are measured directly into the bowl.

Simple Chocolate Cupcakes (makes 12)

  • 3/4 c flour (100g)
  • 1/4 c cocoa  (35g)
  • 1/2 c sugar (100g)
  • 2 tsp baking powder
  • 1/2 tsp vanilla
  • 80g butter
  • 2 eggs
  • 1/2 c milk
  1. Preheat oven to 160 C. Line 12 muffins trays with cases.
  2. Add all dry ingredients to TM bowl, pulse a couple times then add wet ingredients and  mix on speed 5-6 till combined. ( can double or triple qtys )
  3. Bake 160 C , 15-18 mins for normal size cupcakes, 10-12 mins for mini cupcakes

Busy weekend ahead with kids concerts, so making meals in advance. This is so easy with the thermomix. Used vegetable soup guided recipe to make leek and potato soup. Great to be using the homemade vegetable stock. Soup is velvety smooth.

Next time will try sautéing the onions and garlic first in TM before adding all the other ingredients to cook but otherwise easy and the one pot, leave it to cook is fantastic when you’re busy.

Followed two more guided recipes for bread rolls and pesto. Proving the rolls took longer than specified time because indoor temperature wasn’t  warm enough, once the dough had doubled in size, then popped into fridge to save for the morning. So kids had fresh butter rolls hot out of the oven for breakfast and plenty for lunch boxes. Pesto was super fact, seconds to blend and very tasty.

I can see having a herb garden is going to be useful.

Deliciously moist and whipped up quickly in seconds. Reduced sugar in loaf to 120gms.  Wonderful popped  into kids lunch boxes and again followed  thermomix guided recipe. Note : have made this with milk instead of buttermilk  too and still turns out fantastic.

Day eight: Meatballs with sauce, rice noodle soup, mash potato, vanilla cupcakes

Dinner prepared in minutes, so easy. Multi level cooking using the varoma to steam the meatballs while the bowl cooked the sauce. And no need for me to be in the kitchen while  the TM cooks is magic.

The meatballs are healthier for not being browned and cooked in oil. A great easy alternative to pan fried meatballs when time is at a premium.

The broth for this soup was made from the tasty chicken stock paste made in the weekend, another additive free nutritious lunch.

Thermomix mashed potato is superb, the texture is creamy smooth and tastes fantastic and using the guided recipe and butterfly whisk guarantees perfect mash every time.

Made our favourite vanilla cupcakes, using Thermomix, just blitz all ingredients 30 seconds and ready to bake.

 

Day seven Green smoothie and salad

Great way to supercharge the day with a green smoothie straight from the recipe chip, full of vitamin and vitality. Spinach, cucumber, apple, mint, lemon, orange and  ginger.

Next are the ingredients for the salad, pop into thermomix for 3 seconds make a fabulous healthy salad.

Made pizza dough in minutes and pizza for lunch boxes tomorrow so easy using thermomix to grate cheese too.

Day 6 Beef Stroganoff, coleslaw and homemade mayonnaise

Very easy following the guided recipe for beef stroganoff, like having a chef next to you telling you what to do next. Made a huge amount, enough for lunch tomorrow. Good family recipe but next time I will slice the beef more finely and probably brown slightly in pan first. Love way the thermomix gives me time to clean up while it cooks the meal. Quick self clean, then loaded cabbage, apple, carrot and red onion and dressing ingredients to make coleslaw. An extra squeeze of lemon juice and it’s done.

Made a chicken and sweet corn soup on the stove because it’s one I can make in 10 minutes. But I ran out of creamed sweet corn so I popped whole frozen corn into the thermomix and blitzed for 3 seconds  to substitute  creamed corn and used the TM chicken stock. I love the fact that every ingredient is real, no packet stock, no tin corn!

Mayonnaise

Ran out of mayonnaise so I tried the guided recipe for mayonnaise. The thermomix really comes into its own emulsifying. Here is fabulous homemade mayonnaise ready in less than two minutes. And the only work I had to do is pour in the oil.

.Verdict after day 5:

Because it’s so easy to follow the touchscreen instructions I am cooking recipes I would not normally make. So it’s adding variety and and the chopping function for salads is so fast.  And the chicken stock made in the weekend was excellent. There is no other machine in my kitchen that I would  use as often for so many different functions and on a daily basis apart from the stove and the oven of course.
