This is a pic of our chocolate brownie – the Masterchef ‘extreme brownies’ made today with thermomix.  Recipe from the recipe community. With 92 positive ratings had to try the extreme brownie out. Lovely brownie, crunchy top and soft inside where chocolate pieces melted. Perfect with whipped cream or yoghurt. Will certainly be our go to recipe in future, lots of positive comments and we halved the sugar from 440g to 200g as suggested by a few members. Still sweet enough for our taste, definately didn’t want ‘extreme’ sweetness !

In preparation for Christmas we cleaned out our fridge and decided to use up all the leftover vegetables for dinner. Quarter of a head of cauliflower was blitzed into a mac and cheese bake, white sauce made in thermomix. And six tomatoes, the wobbly ends of two celery  stalks along with the fabulous thermomix vegetable stock and egg ribbons became a light tomatoey soup. Used a quick 10 minute recipe from the TMX lunchbox snack recipe book. Good fast food to sit in front of TV  after a long day of spring cleaning. Kids loved the combination of pasta cauliflower and cheese. And the soup and salad was perfect for the mum and dad.

Seriously, really good ice cream, like the ice cream from the strawberry farm in Mangere. The thermomix churns the ice cream twice and it sets overnight in freezer. The recipe is from Captain Janeway  on the  recipe community website,  and he has really shared a lovely recipe. I reduced the sugar from 150g to 130g and used 2/3 cream to milk as we had run out of cream. Didn’t even wait for the second freeze because the kids starting eating it  before I could get it back to the freezer. Perfect for kids summer afternoon treat. And the best thing is knowing all the ingredients that were used in the ice cream, real strawberries, cream, milk, and sugar. Have to make the day before but it’s well worth the wait. Will be making a double batch next time because the pic below was taken after the kids had demolished most of the tub! Fabulous and fast.

Ordered some cookbooks from the online store. Here they are, super excited to see recipes for wonton pastries and dumplings. Have relatives visiting no time to try them out yet  but after Christmas going to have some more fun testing these recipes.

We don’t eat fudge around here but the 75 plus positive comments on the recipe community prompted me to make this recipe for caramel fudge. Again super easy, the thermomix does all the work, no stirring and no other bowls to clean and very delicious. Fantastic foolproof recipe, great for Christmas gifts.

Hummus

I’ll have to think of a different adjective to describe how “easy” it is to make hummus. But it is easy, guided recipe, measure straight into bowl. Substituted peanut butter for tahini paste as we didn’t have any in pantry and the result is yummy.  Toasted  Pita pockets and freshly made hummus for breakfast. Whoopee! There must be a TM recipe for pita pockets too. Watch this space.
