In our effort to eat healthier, paleo recipes which exclude saturated fat, sugar and gluten always tick the box. Was happy to find a recipe from the Thermomix community for Paleo Butter Chicken. It’s is Pete Evans butter chicken recipe from his Family Food book converted for the thermomix. He uses coconut oil instead of butter and coconut cream instead of cream. I switched out coconut cream for coconut milk to make it “skinnier” and used about 700g of chicken thigh. Wow, great flavour, next time I will add the cashew nuts as per the thermomix basic cookbook and this should thicken the sauce slightly more. Everyone had seconds, loads of sauce, and enough for lunch tomorrow. Link below.
