Rice Salad

Brown rice salad

Wonderful guided brown rice salad from the basic cookbook. Vegetables steam at same time as the rice which cooks in the basket. For extra flavour to the rice, added a tablespoon  of chicken stock paste to the steaming water.  Mixed in tuna, cherry tomatoes, olives, mint, parsley  and gherkins at the end. Perfect for lunch boxes and when you need to cook ahead. Yah easy dinner is done before midday.

Will try a friend’s suggestion next time, mix cooked rice with the chopped raw salad recipe from the basic cookbook as a change from cooked vegetables and add different combination of proteins and herbs and would take out time needed to chop vegetables too ( chickpeas/ bacon/ coriander/ roasted vegetables/ feta/nuts/cranberries)

Tip : let the rice and vegetables cool before assembling

Tip: make sure potatoes diced 1cm to ensure they are soft before bring whipped into mash. Served with raw broccoli salad. Scrummy, the kids love both these dishes.

Wholemeal scones

Wholemeal berry scones

Lovely wholemeal berry scones recipe made from Something for Everyone cookbook. Recipe called for wholemeal self raising flour, 450g wholemeal flour used so I added 5 tsp of baking powder to sub for self raising flour. All the recipes have little sugar or salt added to cater for the babies. Used 125 g mixed frozen berries instead of blueberries , next time will  add a tablespoon of sugar to flour as she suggests. Very yummy scones, liking the wholemeal texture.

Chia and pepita ( gluten free ) bread

Another repeated post because it’s so good.  The guided chia and pepita bread recipe made today shows the real power of the thermomix as it mills basmati rice, brown rice, millet into flour. Then we add a range of seeds; quinoa, chickpeas, chia, pepitas. Only needs 1/2 hour to prove and 40 mins to bake. A soft delicious gluten free loaf. Miss 14’s favourite bread.

Bang Bang Chicken noodle salad

Another easy tasty meal, this is Louise Fulton Keats “Bang bang chicken” Recipe from her Something for Everyone cookbook. Steamed chicken in Varoma 20 mins, Varoma temp, speed 2. Made sauce by blitzing tahini, peanut butter, soy sauce, sherry vinegar, ginger and sesame oil and water to thin. Used water from steaming chicken in bowl to soften the noodles for a couple minutes. Assembled noodles, chicken, vegetables  in serving dish, topped with the yummy sauce and chopped coriander.

This is a firm family favourite Thermomix recipe, the one to drag out when  haven’t any energy to cook. It’s easier than butter chicken because it requires fewer spices and is a fifteen minute meal from start to finish. It’s gobbled up by all and the sauce is great over rice, vegetables  or noodles. Kids love this one, just like the comments state. The sauce ingredients are peanut butter, honey, mustard and curry powder. Increased the chicken content to 500 g breast and 400 g thigh meat so it lasts for afternoon tea and dinner. And it still works if you’re running low on peanut butter, honey or mustard. I only used 80g peanut butter, 50g honey and 30g mustard this time and it’s still delicious. The combination of nuttiness and sweetness and mustard is great.  It’s plain simple awesome family food.
